Single 9-inch Piecrust

Total time: 30 min Active time: 10 min Yield: 1 crust

1 ⅓ cups all-purpose flour

½ cup chilled vegetable shortening, cut into small pieces

½ teaspoon salt

¼ cup iced water

  1. Stir together the flour, butter, and salt to blend. Cut the butter into the flour, using a pastry cutter or your fingers, until the butter is in pea-sized chunks.

  2. Add the water into the middle of the flour. Add only as much as is needed to make a dough that just comes together. Gently toss the mixture until the flour is moistened. Knead the dough together on a lightly floured surface. Shape dough into a 1-inch thick disc, wrap in plastic wrap and chill for about 20 minutes.

  3. Replace the dough on a lightly floured surface and roll the dough into an even round, about 13-inches in diameter.
