Swiss Chard and Ham Quiche

Ingredients
1 tablespoons olive oil
3 cups Swiss chard, chopped
1 small onion, chopped
4 large eggs
¾ cup half-and half
½ teaspoon salt
¼ teaspoon black pepper
½ cup (3 ounces) cheddar, grated
½ cup cooked ham, diced
1 teaspoon fresh thyme leaves
1 recipe pie crust
Directions
Heat oven to 350˚ F.
Heat the oil in a large skillet over medium-high heat. Add the chard and onion and cook until tender, about 3 to 4 minutes.
In a medium bowl, beat the eggs with the half-and-half, then season with thyme, salt, and pepper. Add the cheddar, ham, chard, and onion and mix. Pour into a piecrust and bake until set, about 40-45 minutes.
Single 9-inch Piecrust

Ingredients
1 ⅓ cups all-purpose flour
½ cup chilled vegetable shortening, cut into small pieces
½ teaspoon salt
¼ cup iced water
Directions
Stir together the flour, butter, and salt to blend. Cut the butter into the flour, using a pastry cutter or your fingers, until the butter is in pea-sized chunks.
Add the water into the middle of the flour. Add only as much as is needed to make a dough that just comes together. Gently toss the mixture until the flour is moistened. Knead the dough together on a lightly floured surface. Shape dough into a 1-inch thick disc, wrap in plastic wrap and chill for about 20 minutes.
Replace the dough on a lightly floured surface and roll the dough into an even round, about 13-inches in diameter.
