Apple Radish Slaw with Honey Lime Vinaigrette

Ingredients
Salad
1 Granny Smith apple, sliced
1 cup carrots, sliced
½ cup radish, sliced
⅓ cup green onion, sliced
Honey Lime Vinaigrette
1 jalapeño, seeds removed, minced
2 Tablespoons fresh mint, minced
1 clove garlic, minced
3 Tablespoons honey
3 Tablespoons olive oil
Juice of 2 limes
½ teaspoon salt
Directions
Mince the jalapeno, garlic, and mint and add to a medium mixing bowl. Whisk in the remaining ingredients for the vinaigrette.
Slice apple, carrots, and radish into small matchsticks. Add to the mixed vinaigrette. Toss well and serve at room temperature, or refrigerate up to 5 days.
Serve as a side or as a garnish on burgers or other meats.
